This Honeydew Melon Smoothie is a blend of fresh sweet melon, apple juice, fresh baby greens and mint leaves – creating a super refreshing drink without the need for a juicer! It’s completely sugar free – yet you’d never guess it – as well as gluten free and vegan.
When I was visiting my family in Chicago last week, we visited the Anderson Japanese Gardens. It was my mom’s birthday and she had mentioned these gardens many times, so finally we made the trip. It rained right before we arrived, but that made the gardens even more interesting. The bark was wet and that created all sorts of swirls of color and patterns.
Two of my favorite things in life are gardening and eating. We were able to enjoy both here at the Japanese gardens. For lunch we dined at their restaurant which had huge picture windows with views out to the gardens. The food was excellent, but what stood out the most to me was the fresh juice options on the menu. Specifically one called “the Hulk.” Who can resist that name?
No, I didn’t bust out of my shirt and turn green as the real Hulk would have, but my tastebuds did bust out with all the delicious flavors! I even convinced my parents to try it despite their apprehension due to the brilliant green color.
Two easy steps to create a bright + healthy honeydew melon smoothie
1. Chop Melon – make sure it’s ripe and sweet
2. Combine Ingredients in Blender + Go!
I have this Vitamix blender and use the liquid setting, blending until it foams. This heats up the juice a little bit, but the foamy part is really yummy. I cool it down with a handful of ice cubes. The bubbly foam slowly dissipates as the juice sits and the ice cubes help with that too. But make sure to grab a spoon to scoop some of that foam off and enjoy it – it’s like a cloud of sweetness!
The juice can also be stored in the fridge – it’s a healthy drink to wake up to every morning. I store mine in a couple mason jars and enjoy it over several days.

- make this a thick and creamy honeydew smoothie by adding yogurt
- combine juice with a couple scoops of ice cream – blend again for a honeydew ice cream shake

- 2 cups fresh honeydew melon, roughly chopped
- 3/4 cup apple juice
- 1 cup fresh kale or spinach
- 4 medium mint leaves (or drop of mint extract)

Chop honeydew.

Measure all other ingredients.

Combine all to a blender and blend until frothy!
