Sheet pan dinners. They’ve really become my friend lately.
Since starting a new job with a long commute, dinners have turned into quick bites or recipes easy enough for my husband to make before I get home from work without him texting me to ask where every single ingredient is.

These mushroom fajitas are really close to one of our favorite mushroom taco recipes from Oh She Glows. It’s one of the cookbooks I actually use for making recipes and there is a NEW cookbook which I totally need!
Fajita Seasoning
The seasonings in this recipe have pop. They’re smoky and savory and just everything you want to wrap up in a warm tortilla.
One of my favorite seasonings is Mexican oregano. It’s one of those must have pantry staples if you love tacos, fajitas, it pretty much just makes anything and everything with a Mexican flavor profile taste amazing.

I just finished reading a book by Dr. Uma Naidoo, director of nutritional and lifestyle psychiatry at Massachusetts General Hospital, called “This is Your Brain on Food” which takes a deep dive into the gut-brain connection and how what we eat influences how our brain feels! Fajita Toppings

- a fast and easy guacamole that really hits the spot
- a squeeze of fresh lime juice
- a sprinkle of diced red onion for fresh crunch
- and a pinch of fresh cilantro for herby goodness

- 2 tsp chili powder
- 2 tsp ground cumin
- 2 tsp Mexican oregano
- 1 tsp smoked paprika
- 1 tsp Kosher salt, more to taste
- fresh ground black pepper, to taste
- 4 Portabello mushrooms caps, sliced
- 2 bell peppers (red and orange) cut into strips
- 1 red onion, slices into wedges
- 3 cloves garlic, sliced
- 3 Tbs olive oil
- 1/4 cup chopped fresh cilantro leaves
- 2 limes (1 for juicing, 1 to serve as wedges)
- 8 small corn or flour tortillas, warmed or toasted over open flame
- 2 avocados

Preheat oven to 400° F. Lightly coat a large sheet pan with non-stick spray.

In a small bowl, combine chili powder, cumin, Mexican oregano, paprika, 1 tsp salt and a few grinds of pepper.

Spread sliced mushrooms, bell peppers, onion and garlic onto the prepared baking sheet. Sprinkle chili powder mixture over the veggies. Drizzle olive oil over the top and gently toss to coat the veggies.

Place into oven and bake for 20 minutes.

Before serving, squeeze the juice of 1 lime over entire sheet pan and toss.

Serve immediately with tortillas. Top with cilantro, guacamole and extra diced red onion and lime wedges.
Quick Guacamole
- 2 avocados, mashed
- 1 lime, juiced (start with 1/2 lime, add more juice to taste)
- 1/2 tsp salt, add more to taste
