This Pineapple Zucchini Smoothie is a super hydrating blend of pineapple, mango, zucchini, pineapple coconut water + chia. It’s a great way to use all that summer zucchini or freeze zucchini for smoothies anytime of the year!

Did you know you can you freeze zucchini for smoothies?
You can use either fresh or frozen zucchini in this pineapple smoothie recipe. I often use frozen zucchini because it’s such a great way to save that extra summer garden zucchini. You can only make so many loaves of zucchini bread!
There is a “proper” way to freeze zucchini. Yeah…I don’t have time for that. Instead, the simple method of chopping it into pieces, placing them into a freezer-safe container or ziplock bag and tossing it in the freezer is good enough for me!
TIP | Since we need 1 cup servings for this zucchini smoothie – I measure that out and freeze the cut zucchini into 1 cup portions.

- Pineapple is also naturally high in fiber, vitamins, minerals + folic acid.
This Pineapple Zucchini Smoothie is exactly what you need to make this summer with all that extra zucchini. Pineapple, mango, and zucchini blended with pineapple coconut water and chia seeds.
- 2 cups fresh or frozen pineapple (fresh preferred)
- 1 cup fresh or frozen zucchini, chopped
- 1 cup frozen mango chunks
- 1 cup pineapple – coconut water* (I used C20 brand)
- 2 tsp chia seeds

Add zucchini, pineapple, mango, and coconut water in a high speed blender. Blend until smooth.

Add chia seeds to the blender and pulse 2-3 times to incorporate.

Add a slice of fresh pineapple for garnish.
*The dark green skin of the zucchini will turn the smoothie slightly greener. If you would like to keep it yellow, peel the zucchini first or use a yellow zucchini.
*If you don’t have coconut water, regular water will be just fine too!
*If you make a larger batch, this smoothie will last in the fridge for a few days. It won’t be a frozen smoothie, but it will be just like a chia drink!
