What makes THIS Pumpkin Pie Smoothie different from other recipes for pumpkin pie smoothies?

Two things: tahini + salt.

The tahini gives this pumpkin smoothie a fantastic complexity. It makes things a bit nutty and creates the creaminess.

Now the salt. It might seem odd to add salt to a smoothie, but THIS IS THE SECRET. DO NOT skip it!

If you’re afraid of the salt, start with a generous pinch and add more from there. Between 1/8 to 1/4 tsp max.

Why does salt enhance flavor?

For this smoothie it makes the sweet seem sweeter and the rich pumpkin-y goodness shine.

One of the best ways to deliver maximum flavor without having to add a bunch of dry spices is to use Pumpkin Spice Extract. In a smoothie, you don’t want to feel any gritty dry spices, so extract is the way to go!

Other uses for pumpkin spice extract: pumpkin white chocolate chip cookies, pumpkin spice banana bread or maple pumpkin oatmeal.

Next, let’s talk ice.

Adding ice to a pumpkin pie smoothie takes away from the creamy texture. Since this smoothie tastes mega delicious when it’s cold, I recommend making it and popping it in the fridge or freezer for 15 minutes. Of course it also helps if all your ingredients start cold – use frozen pumpkin puree to get a head start on the chill.

Pure fall ingredients.

Bananas are often the go-to ingredient to thicken and naturally sweeten smoothies. No reason to add a banana flavor to this smoothie – the pumpkin + tahini work perfectly together to create a smoothie texture. This pumpkin pie smoothie has no banana!

Thanksgiving Leftovers Idea!

This recipe also works well with sweet potato puree. Since you’re bound to have some sweet potato casserole leftover from Thanksgiving use it to make a smoothie. Just take out the maple syrup and cinnamon since your casserole probably has those ingredients mixed in.

Ingredients
  • 1 cup unsweetened almond milk
  • 3 Tbs pumpkin puree
  • 2 Tbs maple syrup
  • 1 Tbs tahini
