How to Make Chile Lime Roasted Pepitas
Roasting raw pepitas is easy! Use this stovetop method, to make roasted pepitas in just 5 minutes. You could easily double or triple the recipe in a bigger sauté pan.
Step 1: Warm oil in pan + toss in pepitas to coat. Toss frequently until edges brown.
You’ll want to make sure you purchase raw, unsalted pepitas. And keep vigilant as they brown quickly and sometimes pop like popcorn! As they brown it will smell just like popcorn too!
Step 2: Add salt, spices and lime juice. Mix until liquid evaporates.
These might be the perfect snack to share with a margarita – salt, chile, lime….it just makes sense. Enjoy!

- 1/2 teaspoon avocado oil
- 1/2 cup raw pepitas
- Juice of 1 lime
- 1/8 tsp chipotle chile powder
- Kosher salt

Warm oil in a small skillet over medium heat. Add the pepitas and stir until coated. Stir frequently until seeds are fragrant and start to brown (about 3 minutes).

Add lime juice, chipotle chile and 2 generous pinches of kosher salt. Stir to coat.

Remove the skillet from heat. Stir until the pepitas are fully coated with seasoning and the lime juice has cooked off.
Taste the pepitas – add more salt to taste.
When I add roasted pepitas to a salad, I like to crush them for maximum distribution. Use a ziploc bag and rolling pin to crush them in a flash!

Love this recipe. However I cooked without salt.(blood pressure) and switched to air fryer 350 degrees for 7 to 9 minutes. I prefer the 7 mins..Toss seeds with oil before starting.
