This Peach Cucumber Salad is simple and fresh – crunchy cucumbers, red pepper, juicy peaches and herbs! Summer flavors that speak for themselves without any fuss. This clean eating salad is the perfect side to bring to your summer potluck.

Does Labor Day signal the end of summer? I’m not sure. I do know that peaches are fading in Arizona. It’s probably a good idea to freeze enough peaches to get through the winter. There’s nothing like defrosting a bit of summer sunshine in the middle of January or making a pitcher of peach margaritas! Must plan ahead!

When sweet summer peaches are at their peak – firm enough to chop into a salad and ripe enough to be sweet and juicy perfection – this easy cucumber salad packs a refreshing crunch.

It’s sturdy enough to keep for a few days in the fridge, is full of hydrating fruit + veggies and is versatile enough to serve alongside any meal of the day.

How to make Peach Cucumber Salad

Last weekend I popped over to the farmer’s market and a vendor was offering samples – chunks of cucumber and peaches. I grabbed a piece of both, made a little sandwich and decided they belonged together.

Along with a little cilantro and red pepper, this Peach Cucumber Salad highlights some of the best summer produce! Best of all, it’s as simple as chop and eat.

Step 1: Chop all ingredients.

Make sure your ingredients are fresh with good crunch!

Step 2: Combine in a large bowl. Enjoy!

+ You could easily take these ingredients – add a ball of mozzarella – then skewer them for a quick appetizer or a peach caprese salad. Four ingredients + summer does all the flavor work.

Ingredients
  • 2 cups Persian cucumber, diced
  • 1 red bell pepper, diced (about 1 cup)
  • 2 peaches, diced (about 2 cups)
  • 1/4 cup chopped cilantro or parsley more to taste
Instructions
  1. Prep all the ingredients.
  2. In a large bowl, combine cucumbers and red pepper.
  3. Gently add peach chunks and cilantro.
