Simple Moroccan Salad

A simple salad with green beans, cucumbers and tomatoes - add a drizzle of nutty argan oil and you have a typical Moroccan side salad.

Ingredients

  • 1 medium cucumber peeled and chopped
  • 1 extra large tomato quartered, pulp removed
  • 2 cups of green beans boiled until just tender
  • 1 chopped onion

Vinaigrette

Instructions

  1. Trim the green beans. Bring them to a boil on medium high heat until tender. About 5-10 min.

  2. While the beans are boiling, trim and chop the rest of the vegetables.
  3. Combine the vinaigrette dressing ingredients and whisk until emulsified.
  4. Toss everything together and enjoy!
