Ingredients

  • 8 dates, pitted and roughly chopped
  • 3 Tbs roasted, salted peanuts
  • 3 Tbs peanut butter
  • 2 Tbs dried coconut
  • 2 Tbs old fashioned oats
  • 1 Tbs cocoa powder
  • 1 Tbs maple syrup
  • 1/4 tsp salt
  • 6 oz chocolate chips (about half a bag) - you can use any chocolate you like - milk, dark, semi-sweet or white

Instructions

  1. Combine the dates, peanuts, peanut butter, coconut, oats, cocoa and maple syrup in a Cuisinart or high speed blender and pulse until mixture is evenly ground and forms a slightly sticky mixture.

  2. Form about 10 peanut butter date balls by rolling mixture in the palm of your hands. About 1 heaping tablespoon per ball. Place in freezer for 5 minutes while you melt chocolate.

  3. Melt chocolate chips in a double boiler (or my makeshift version: a metal bowl on top of a small saucepan with an inch of water in it.) Bring water to a boil, turn heat to low, all the while whisking the chocolate chips in the metal bowl until fully melted.

  4. Prepare a plate to place the chocolate dipped balls. A piece of parchment paper on the place is helpful here.

Use a fork to roll each ball in the melted chocolate. Shake it a little and then place each ball on the plate. Top with a little extra chopped peanuts and some Maldon finishing salts.

  5. Place the plate with balls in the fridge or freezer for 10 minutes so that the chocolate sets. Enjoy!
