Healthy Oatmeal - Apple Walnut Steel Cut Breakfast Oats

A hearty bowl of Steel Cut Breakfast Oats is a great way to start your day healthy and happy! Packed with diced apples, shredded carrots, sweet raisins, spices, and walnuts, this healthy oatmeal is sugar-free, whole grain, and full of good for you ingredients!

Ingredients

Steel Cut Oats (Prep)

For Your Breakfast Bowl

  • 2 medium apples, diced
  • 1 Tbsp water
  • 1/2 cup grated carrot, more to top
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 1/2 cup raisins
  • 1 cup milk of choice (add more milk for a creamier texture)
  • 1 1/2 tsp pure vanilla extract
  • 1/2 cup coarsely chopped walnuts, more to top
  • 1 Tbsp ground flax seed, optional

Instructions

Soaking Oats Overnight

  1. To soak steel cut oats, add 1 cup oats to 3 cups room temp water. Let site overnight on the counter. Drain and rinse in the morning.

Toppings:

  1. In a medium saucepan, mix diced apples, 1 Tbsp water, shredded carrots, spices and salt. Sauté on medium heat until apples start to soften, about 3 minutes.

  2. Add drained oats, raisins, vanilla and milk. Simmer over medium-low heat until oats are tender - about 5 minutes.

  3. Stir in walnuts. Sprinkle with flax seed, more carrots, raisins - whatever makes you happy!

Notes

*if you reheat this oatmeal, add a splash of water or milk to loosen the oats.
