No Bake Peanut Butter Banana Bread Bites

No Bake Peanut Butter Banana Bread Bites are little snack balls full of peanut butter, banana powder, flax seeds + oat bran that taste like Peanut Butter Banana Bread.  A couple bites and you'll satisfy that sweet tooth!

  1. Place freeze dried bananas in a ziploc. Roll until crushed into powder with a rolling pin or use a Cuisinart.
  2. In a small bowl, mix 2 Tbs banana powder, 1 tsp of the cinnamon and a couple pinches of salt. Set aside. This is for dusting the rolled bites.
  3. Combine all remaining dry ingredients in a medium bowl.
  4. In another bowl, mix peanut butter, vanilla and brown rice syrup together. Then add to dry ingredients.
  5. Mix until incorporated and dough comes together. It will be on the dry side.
  6. Using your hands, squeeze the dough into a ball and form. | TIP: damp hands will prevent the dough from sticking to your hands.
  7. Roll each bite in dusting mixture.
  8. Place in a tupperware. Refrigerate for longest shelf life.

Notes

Because the consistency of nut butters is different, if your mixture is a little on the dry side, you can add 1 Tbs of water to give it the little extra moisture it may need.

**To really amp up the banana flavor, try adding a tsp of banana extract! Whoa!
