Warm raisins and buttermilk create a traditional and authentic Irish Soda bread!

Ingredients

  • 3 cups sifted flour
  • 2/3 cups sugar
  • 1 teaspoon baking soda
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups raisins soak raisins in warm water till plump and drain
  • 2 eggs beaten
  • 1 1/4 cup buttermilk
  • 4 tablespoons Kerry Gold butter melted
  • Grease Crisco shortening and flour two medium loaf pans.

Instructions

  1. Heat oven to 350F.

  2. Sift together flour, sugar, baking powder, salt and baking soda.
  3. Stir in raisins.
  4. Mix eggs and buttermilk together, add to flour mixture, stir with fork till blended together, stir in melted butter.
  5. Mix till sticky dough forms.
  6. Divide evenly into loaf pans.
  7. Bake at 350 for 45 minutes or till a toothpick inserted in center comes out clean.
