Chile Lime Roasted Pepitas will blow your tastebuds! They make a healthy snack, a salad topping or a crunch to your favorite veggie taco recipe!
Warm oil in a small skillet over medium heat. Add the pepitas and stir until coated. Stir frequently until seeds are fragrant and start to brown (about 3 minutes).
Add lime juice, chipotle chile and 2 generous pinches of kosher salt. Stir to coat.
Remove the skillet from heat. Stir until the pepitas are fully coated with seasoning and the lime juice has cooked off.
Taste the pepitas - add more salt to taste.
When I add roasted pepitas to a salad, I like to crush them for maximum distribution. Use a ziploc bag and rolling pin to crush them in a flash!
