Ingredients

  • 1 cup rolled oats
  • 1/2 cup wheat germ
  • 1/2 cup coarsely chopped pecans
  • 1/3 cup chopped raw unsalted cashews
  • 1/4 cup almonds chopped or sliced
  • 1 1/2 tsp cinnamon
  • dash of salt
  • 2 tbsp dark brown sugar
  • 2 tbsp honey
  • 2 tbsp coconut oil
  • 3 tbsp water
  • 2 tsp. orange extract
  • dried cranberries and/or dried blueberries for topping

Instructions

  1. Combine the first 7 ingredients in a medium bowl.
  2. In a pyrex measuring cup, combine oil, honey, brown sugar and water. Microwave for about 30 seconds until warm and you can easily blend the wet ingredients together. Once mixed add the orange extract. Mix into dry ingredients.
  3. Place on a rimmed baking sheet lined with parchment paper in a thin even layer.
  4. Bake at 200 degrees for 25 minutes for soft and chewy granola.
  5. Mix in dried fruit after the granola has cooled.

Notes

For a crunchy version, bake at 200 degrees for 1 hour and 45 minutes.
