In my house, we love it. It’s tough, it’s a superfood, it grows like a weed…getting your nutrients couldn’t be easier. Kale was actually the most popular vegetable until the middle ages.

If you don’t consume much dairy, eating leafy greens is important to get your daily calcium intake. Kale is rich in calcium and our bodies can absorb its calcium much easier than cow’s milk (nutritionfacts.org). It’s also rich in vitamin K, vitamin A and iron. Bravo kale!
