These Healthy Chocolate Peanut Butter Date Balls take just 10 minutes to make! With healthy ingredients like dates, peanut butter, oats, shredded coconut and maple syrup, these chocolate peanut butter bon bon are irresistible!
This recipe is so simple and it’s suitable for any occasion from just hanging at home to a holiday cookie tray! They are similar to peanut butter buckeyes, but without all that powdered sugar that is so overwhelmingly sweet. The dates give it natural sweetness and a more caramel flavor.
The combination of peanut butter and maple syrup is scrumptious. The coating of melted chocolate gives you one seriously delicious chocolate bon bon!
For this recipe you’ll need:
- Medjool dates
- Peanut butter (Santa Cruz dark roasted peanut butter is my love!)
- Old fashioned rolled oats
- Shredded unsweetened coconut
- Peanuts
- Maple syrup
- Cocoa powder (Dutch process cocoa powder gives deep rich chocolate flavor)
- Chocolate chips
- Flaky sea salt to top, like Maldon Sea Salt
Step 1: Add ingredients to blender.
Yep, it’s that easy – just add it to a high powered blender and pulse/mix away! It will look coarsely ground and will stick together when pinched between your fingers.
Tip: if you chop the dates before adding them to the blender, it makes it easier for your blender!
Step 2: Roll into balls.
Roll them into balls, place on a plate and stick in the freezer for 10 minutes to make coating in chocolate easier.
Step 3: Melt chocolate + dip!
You can melt chocolate easily in a double boiler. I put together a makeshift version with a stainless steel bowl and small pot with about an inch of water in it.
Heat over medium-low until chocolate is fully melted, whisking as you go. Turn off the heat and start dipping!
Tip: use a fork to roll the ball, then when you lift it out, tap the fork on the side of the bowl – the excess chocolate will fall through the tines of the fork.
Place peanut butter date balls on parchment or wax paper lined baking sheet (unlike me that forgot) and sprinkle with crushed peanuts and flaky salt. Place in fridge to set the chocolate.
These can also be frozen. Defrost on the counter top for about 15 minutes and enjoy!
These Healthy Chocolate Peanut Butter Date Balls take just 10 minutes to make! With healthy ingredients like dates, peanut butter, oats, coconut and maple syrup, these chocolate peanut butter bon bon are irresistible!
- 8 dates, pitted and roughly chopped
- 3 Tbs roasted, salted peanuts
- 3 Tbs peanut butter
- 2 Tbs dried coconut
- 2 Tbs old fashioned oats
- 1 Tbs cocoa powder
- 1 Tbs maple syrup
- 1/4 tsp salt
- 6 oz chocolate chips (about half a bag) – you can use any chocolate you like – milk, dark, semi-sweet or white
-
Combine the dates, peanuts, peanut butter, coconut, oats, cocoa and maple syrup in a Cuisinart or high speed blender and pulse until mixture is evenly ground and forms a slightly sticky mixture.
-
Form about 10 peanut butter date balls by rolling mixture in the palm of your hands. About 1 heaping tablespoon per ball. Place in freezer for 5 minutes while you melt chocolate.
-
Melt chocolate chips in a double boiler (or my makeshift version: a metal bowl on top of a small saucepan with an inch of water in it.) Bring water to a boil, turn heat to low, all the while whisking the chocolate chips in the metal bowl until fully melted.
-
Prepare a plate to place the chocolate dipped balls. A piece of parchment paper on the place is helpful here.
Use a fork to roll each ball in the melted chocolate. Shake it a little and then place each ball on the plate. Top with a little extra chopped peanuts and some Maldon finishing salts.
-
Place the plate with balls in the fridge or freezer for 10 minutes so that the chocolate sets. Enjoy!
