Two weeks ago I was in Santa Fe, NM enjoying all the delicious New Mexican fare – tacos, burritos, enchiladas, etc. Santa Fe is a foodie heaven!
The weather was pretty hot and I was thoroughly enjoying drinking all kind of fruity beverages – jamaica, horchata, and, of course, agua fresca!
Simple, refreshing and exceptionally hydrating – agua fresca is the BEST summertime drink. Lightly sweetened with honey, this Cucumber Lime Agua Fresca is like cucumber water and limeade had a baby.
Aguas frescas can be sweet depending on the type fruit you use and how much sweetener you add. This Cucumber Lime version is very light – it’s not meant to be sweet – just clean refreshing hydration.
How to Make Aguas Frescas
Aguas Frescas are simply a blend of fruit, lime juice, water and a sweetener. They are similar to a smoothie, but with lots more water.
Just Blend. Add Ice. Grab a Straw.

While any fruit can be used, berries or fruits that are seedy will need to be run through a strainer for a smooth beverage.
For the very best fruity agua fresca flavors, you’ll need to make sure you have really tasty, ripe fruit.

If you love chia drinks, take this Cucumber Lime Agua Fresca to the next level by adding chia seeds. Just add a teaspoon into your glass, wait a few minutes and you’ll have a chia drink.

- 1 large English cucumber (about 2 cups roughly chopped)
- 1/2 cup lime juice (3-4 limes)
- 2 cups water
- 1/3 cup honey
- 2 cups ice cubes
- mint leaves, to garnish

Peel the cucumbers and remove the seeds using a spoon. Chop cucumbers into chunks and place into the blender.

Add the 1/3 cup honey, ½ cup of lime juice, and 2 cups of the water into the blender. Process for a couple of minutes, until everything has been processed into a smooth mixture.

Add 2 cups of ice cubes in a large pitcher, stir and enjoy!

Option to garnish with slices of lime and mint sprigs.
