That’s right, Banana Bread French Toast. It’s the perfect way to use leftover banana bread and give it a new purpose!
While on a vacation in Austin, Texas, I was brunching at South Congress Cafe. They had a highly recommended carrot cake french toast on the menu. Of course, I ordered it, I’d be crazy not to.
The texture was very light and that is key. You can’t make good french toast out of super moist banana bread – it won’t soak up any of the french toast mix.
After I returned from my trip to Austin, I tried a couple of banana bread recipe ideas and found this whole grain version give you just the right texture. THIS banana bread recipe is perfect for the job. However, if you already have banana bread – absolutely use it.
Since fall was just underway when I created this recipe, I made a couple ingredient swaps. Instead of the traditional vanilla extract, I used pumpkin pie extract, for cinnamon I used pumpkin pie spice. This spiced french toast was perfect to start the fall season, but of course you can make it the traditional way.
Your french toast game is strong when you use slices of banana bread!
Take your favorite banana bread and turn it into french toast!
- 1 loaf of Banana Bread
- 1 cup milk of choice
- 2 eggs
- 1 tsp Vanilla Extract or Pumpkin Spice Extract
- 1/2 tsp cinnamon or pumpkin pie spice
- dash of salt
- zest of 1 lemon

In a shallow pan, mix milk, spices + zest to distribute evenly.

Add eggs and whisk until incorporated.

Dunk thick slices of banana bread, coating each side.

Place on a hot, greased griddle and toast each side until nice and brown. About 3 min per side.
